Some foods, as well as contributing essential nutrients to the body, also contain additional components that improve disease resistance and general health status over and above that induced by ingestion of conventional foods. The so-called functional foods, and prebiotics and probiotics exemplify the relationship that exists between nutrition, the gut (the largest element of the body’s immune system) and its flora, immunology and health. This important book contains chapters covering the basic principles of nutrition, gut microecology and immunology, as well as chapters which discuss the way in which this knowledge may be used to explain the positive and negative effects of food consumption, metabolism, probiotics and prebiotics. Food hypersensitivity and allergic reactions, carcinogenesis, and the role of nutrition in the reduced immunity of the aged are also discussed in detail. The editors of this exciting and informative book, who between them have a vast wealth of knowledge of the area, have drawn together and carefully edited international contributions from many well known and respected workers in the area. Gut Flora, Nutrition, Immunity and Health provides essential information for a range of professionals including nutritionists, dietitians, food scientists, microbiologists, gastroenterologists, immunologists and all personnel working in the development and use of functional foods and supplements, prebiotics and probiotics. Libraries in universities and research establishments where these subjects are studied and taught, and pharmaceutical and food companies should have multiple copies of this very useful book on their shelves. Child Poverty and Deprivation in the Industrialized Countries L945 1995

The authors in this volume utilize a common analytical framework to evaluate how economic, family structure, and public policy changes affected the well-being of children in the industrialized countries in the West and the East from the end of the Second World War to the mid-1990s. Throughout the industrialized world, the living standards and social well-being of children improved remarkably over these five decades. But the quarter-century 'golden age' that followed the Second World War gave way to a period of stagnation after the early 1970s. Many of the negative developments of the past two decades could not have been easily prevented because of the profound structural changes that have affected all industrialised economies and the profound political changes that have affected the former Soviet Bloc. Nonetheless, adverse or neglectful social policies share some of the blame for the recent unfavourable changes in child well-being. The evidence presented suggests that, given current economic prospects and family structures, further weakening of social policies targeted at children could erode much of the progress of the past fifty years.

Nutrition A Health Promotion Approach Third Edition

The third edition of this highly regarded introductory textbook continues to cover all aspects of nutrition, including nutritional epidemiology, social aspects of nutrition, the science of food as a source of energy and essential nutrients, and the microbiological safety of food and food processing. Its focus is on nutrition in industrialized nations where nutritional deficiencies in the traditional sense are less of an issue, but the roles of diet in causing or preventing chronic disease and maintaining good 'life-long' health and well-being are gaining ever-increasing attention. The importance of good health promotion is therefore a guiding principle throughout the book, supported by a section devoted to health promotion theory. Nutrition - a health promotion approach is the book of choice for first year nutrition students looking for a readable but comprehensive introduction to the field, dieticians undertaking the nutrition components of their course, and other students undertaking nutrition modules as part of a broader scientific or professional course such as food science or catering.
