Colour Atlas of Food Quality Control

This extensively color-illustrated atlas serves as a comprehensive guide not only to persons actively involved in food quality control but also to students and trainees, as well as to nontechnical food in-dustry personnel who wish to enhance their product knowledge. Each chapter is devoted to a commodity group (e.g., fresh meats) with two non-commodity chapters concerned with precepts of food quality control and foreign bodies and infestations. Those foods similar in nature and which could be placed in more than one chapter are cross-referenced. Extensively Illustrated Illustrations were selected based on those quality defects most commonly encountered at retail or final inspection level, together with less common defects which illustrate a point of particular signif-icance. Rare cases of actual spoilage or visible quality dete-rioration of some shelf-stable products are provided to serve as a reference point. Particular attention in this respect is paid to "exotic" imported goods such as Oriental fermented products, the nature of which may be unfamiliar to many persons involved in food inspection. Covers Technical Aspects of Quality Control The atlas is primarily concerned with the technical aspects of qual-ity control. The visual faults illustrated are related to the manufac-turing technology involved, where possible, in order to identify their cause. In addition, examples of laboratory tests which may be of value in confirming visual diagnoses are included. Food poisoning agents (microbial or chemical in nature) which cannot usually be de-tected by visual examination and specific problems of a public health nature are also discussed.

The outbreaks and collective violence arising from the tensions existing within society have long been themes in the study of British social history. This book, first published in 1983, attempts to survey the whole range of these rural riots, to compare and contrast them, and to draw general conclusions. Seventy-five maps are included in this volume, each with an accompanying commentary written by an authority on the particular subject. Taken together, the maps show how the distribution of protest changed over time, how particular forms of protest – riots connected with land, with food and with labour – altered as Britain developed from a predominantly feudal to a prominently capitalist society. This title will be of interest to students of history.

The Atlas of typical food from Montenegro seeks to promote not only the high quality traditional products presented in this volume, but also to raise awareness of the importance of preserving and protecting Montenegrin culinary heritage, local traditions and the rural economy. This Atlas builds on the inventory of origin-linked products and traditional dishes in Montenegro that could be registered as PDOs, PGIs and TSGs. Origin-linked products reflect the intersection of nature and culture - the accumulation of local knowledge and traditions passed down over the years in a specific geographical location. By adopting quality schemes such as protected denomination of origin (PDO) and protected geographical indication (PGI), in line with the European Union, quality-oriented producers can differentiate and protect their products on the market, ultimately preserving and promoting their unique food heritage.

Digital atlas of traditional food made from cereals and milk

Recent discussions about food safety and an awareness of vanishing traditions have resulted in an increasing interest in traditional foods and food heritage. The Digital atlas of traditional food made from cereals and milk explores the traditional food products that could have been made by transitional hunter-gatherers and the early farmers in south-west Asia by examining the traditional foods still being made today. The author has sampled traditional foods throughout south-west Asia, sometimes in large cities but more often in small villages or even remote farmhouses. His research shows that traditions can persist over a long period, but the rarity of some of the items he was able to collect also indicates that these foods represent an endangered mirror of our remote past. In the first part of the atlas, the author explores the basic principles of the processes applied to cereals and milk. What kinds of traditional foods can be considered representative of an ancient and unique traditional cuisine? Which technologies are necessary for their production? And how might these foods have been made on a large scale and with efficient use of fuel? How were they preserved for long periods? The atlas portion of the book presents well over 200 samples of traditional foods. Each sample includes a description with high-quality photographs.
